Title: Monterey Penne

Yield: 2 Servings

1 Red or green pepper, cut in julienne strips (or Both)
1cQuartered, fresh mushrooms
1 Onion, coarsely chopped
4cHot cooked penne pasta, drained
1cMonterey jack cheese, shredded

Place veggies and 2 tbsp water in a covered microwaveable dish. Cook on high for 4-5 minutes. Drain veggies and toss with pasta and cheese. Makes 2 servings.
